Traditional gastronomy of Cantabria<\/strong><\/h2>\n

Stews<\/strong><\/h3>\n

In mountainous, northern and cold areas it is common to find a hearty stew as the typical dish: hot soup to warm you up, pulses and vegetables to provide all the necessary protein, and various meats to build up fat reserves for winter. The most complete meal you can get!<\/p>\n

The cocido monta\u00f1\u00e9s is a robust stew typical of the inland villages of Cantabria. White beans and kale are its basic ingredients, to which various cuts of meat are added, such as chorizo, spare ribs, black pudding and bacon. The cocido monta\u00f1\u00e9s is served all together, without separating the ingredients. An excellent option for recharging your batteries!<\/p>\n

Cantabria also has the cocido lebaniego, characteristic of the Li\u00e9bana district. Equally hearty as the cocido monta\u00f1\u00e9s, the cocido lebaniego differs in the legume used \u2014 instead of beans it is made with small chickpeas, always accompanied by kale or cabbage, various meat products, and a stuffing made with breadcrumbs, egg, chorizo and parsley.<\/p>\n

Anchoas de Santo\u00f1a<\/strong><\/h3>\n

Cantabria is fishing country par excellence, and its primary produce from that sector is among the most sought-after in the country. The anchovies of Santo\u00f1a are a true delicacy and very popular within the traditional gastronomy of Cantabria. They are prepared by hand in this seafaring town and, after a meticulous process, are preserved in olive oil, ready to serve. The Santo\u00f1a anchovy is one of the best-known delicacies, also thanks to the region’s famous canning industry, but in the region you will also be able to eat barnacles, razor clams, spider crabs, clams and prawns, among other things, as well as fresh fish such as northern tuna and sardines. You have to try them all!<\/p>\n

Cantabrian cheeses<\/strong><\/h3>\n

You can never leave a region without trying its typical cheeses. In Cantabria we can find three cheeses with a protected designation of origin: Queso de Cantabria, Quesucos de Li\u00e9bana, and Queso Pic\u00f3n Bejes-Tresviso, the latter being particularly typical of the Picos de Europa region, where it is left to mature in caves for a long period.<\/p>\n

Rabas<\/strong><\/h3>\n

What better starter than a snack and a plate of rabas? These battered fried squid are the quintessential tapa of the region, always served with half a lemon to squeeze to taste. Sharing is caring \u2014 everyone must try the rabas!<\/p>\n

Marmita<\/strong><\/h3>\n

Finally, we introduce you to the marmita: a traditional stew from coastal areas historically inhabited by fishermen. It is made with potatoes, onion, pepper, tomato and white tuna or northern tuna, which is the absolute star of this traditional dish. In Cantabria there is a special time of year to try this delicacy: on St Roch’s Day, 16th August, marmita competitions are held in many coastal villages. One of the most famous places to watch the competition is the seafaring town of Laredo. In San Vicente de la Barquera it is known as Sorropotum.<\/p>\n

Puddings<\/strong><\/h3>\n

To enjoy the complete Cantabrian experience, you must finish your tasting of typical dishes with a golden flourish: the puddings of the traditional gastronomy of Cantabria. First, sobaos pasiegos are the quintessential sweet of the area. They are made with generous amounts of sugar, butter, flour and eggs. You can also try the famous quesada pasiega, a tart made with cow’s milk, butter, wheat flour, eggs and sugar. Thanks to its firm consistency, it can be eaten by hand. Both sobaos and quesada are typical puddings from the Valles Pasiegos in Cantabria.<\/p>\n

Finally, we recommend the corbatas de Unquera and the pantortilla de Reinosa \u2014 two of the most popular sweets, both made with puff pastry. Once you start trying them, you will not be able to stop.<\/p>\n
